Mr. Moylan’s Aunt’s Chocolate Cookie Cake

Ingredients:

  • 1 cup of butter (softened)
  • 2 cups of sugar
  • 4 eggs
  • 1 tsp. of vanilla extract
  • 4 cups of flour
  • 4 tsp. of baking powder
  • 1 tsp. of baking soda
  • 2 cups (16 oz.) of sour cream
  • 2 cups of chocolate chips

Directions:

  1. Cream butter and sugar until light and fluffy
  2. Add eggs one at a time, and beat well after one is added
  3. Beat in vanilla
  4. Combine flour, baking powder and baking soda
  5. Add to creamed mixture alternately with sour cream
  6. Beat well after each addition
  7. Fold in chocolate chips
  8. Pour into greased or floured cake pan
  9. Add chocolate chips on the top of batter (optional)
  10. Bake at 350° for 60-65 minutes or until a toothpick inserted in the center comes out clean
  11. Cool for 10 minutes before removing from pan to a wire rack for cooling

When asked why this is his favorite, Mr. Moylan answered, “This is my favorite because we always eat it together after dinner when we are all stuffed, but it’s so good that we all have to have a piece. My mom is especially funny when she eats this because she only eats the pieces with the most chocolate chips in it (she is a very picky eater). She will leave half of a piece on her plate and pick at the chocolate chips until there are no more. This is our family staple around the holiday times and it reminds me of all the family memories that I hold close.”

Oreo Pie

Ingredients:

  • 1 Oreo Pie Crust
  • 1 sleeve of Oreos
  • 1 small package Vanilla pudding
  • 8 oz. cool whip, thawed
  • 1 1/2 c. milk

Directions:

  1. Whisk together vanilla pudding and milk and set aside until thickened.
  2. Using a food processor, crush Oreos until crushed into small pieces.
  3. In a large bowl, combine cool whip and Oreos. Stir in pudding mixture until combined. Pour mixture into crust.
  4. Chill for 4 hours before serving.

This is one of Ms. Ruela’s favorites because she said “It’s delicious and super easy to make. It is definitely a crowd pleaser and leaves my little cousins wanting more.”

 

Seven Layer Cookies

Ingredients:

  • 1 stick of butter
  • ½ graham cracker crumbs
  • 1  6 oz. bag of chocolate chips
  • 1  6 oz. bag of butterscotch chips
  • 1 cup shredded coconut
  • 1 can condensed milk
  • 1 cup chopped nuts

Directions:

  1. Preheat oven to 350°
  2. Melt butter in 10×15” pan by placing it in the oven for a few minutes
  3. Sprinkle graham cracker crumbs
  4. Pour the chocolate chips then butterscotch chips
  5. Pour one cup of shredded coconut
  6. Drizzle the condensed milk all over it
  7. Sprinkle the chopped nuts on top
  8. Bake for 20-25 minutes
  9. Cool completely before cutting

This is one of my family’s favorite recipes because they are really easy and fun to make and we all put aside the whole day to make a bunch of them and spend time together as a family.
